Roasted Balsamic Brussels Sprouts

Cook Time: 20-25 minutes

Ingredients: 1 1/2 lbs Brussels sprouts, 1 onion-very thinly sliced, 2 cloves garlic- minced, 2 Tb. olive oil, 2-3 Tb.balsamic vinegar, , 1/4 tsp. coarse or Kosher salt; pepper to taste
Directions:
1. Preheat oven to 400 degrees.
2. Rinse and drain Brussels sprouts; slice lengthwise in half as pictured above. Place in 9″ x 13″ glass baking dish. Mix in sliced onions and minced garlic.
3. Add olive oil and balsamic vinegar. Mix well to make sure all vegetables are coated. Sprinkle coarse salt on top.
4. Roast in the preheated oven for approximately 20-25 minutes, stirring vegetables every 5 to 7 minutes for even browning. Adjust salt and pepper to taste. Enjoy!!
